When I push the back of my tongue against the roof of my mouth I feel like gagging...is it normal or do I push my tongue too far back?

It's normal, as it ordinary, though not normal healthy. The soft palate is meant to have the pressure of the tongue against it, but if you have never done it your whole life, the area will be easily overstimulated.

To me, getting my tongue up there feels a lot like the motion you do when trying to clear snot from the sinuses--and in fact, sometimes you do. You will also probably feel that your air supply is constricted, which it is, because CFD--the reason we are all here.

As you work on this over time, your gag reaction will adjust and so will your airways. Be patient, do as much as you can without puking, and keep pushing your boundaries gently but persistently. That's not a dangerous feeling--its the sensation of progress.

Takes time, I've been at this since 2017 and am seeing great results, but I can remember feeling like you. It's amazing as it gets better.
