When I swallow I feel it mostly on the right of my throat, however if I am conscious about it I can swallow on my left as well. I am guessing ideally we should be swallowing right down the middle. Thoughts on this?
Try to swallow as symmetrically as possible, but don't sweat it too much in the beginning. Just make sure you are keeping track of which side makes more progress. For example, I spent a lot of time focusing on my right side, so much so that it made my jaw uneven. Now I am training my left side more and it's catching up.

How are you tracking the progress of each side?
By looking in the mirror and looking at the monthly progress pics I take. I should also note that I have spent a lot of time training my eye to see good facial confirmation and form. I've made it a game: I look at people on the street/movies/etc. and try to judge their maxillary position. I look at models' eyes, nose, cheekbones, etc. to see how the tongue has affected that area. It takes practice but will definitely help you in understanding where your own tongue is.
