I’m extremely successful at getting the front and middle part of the tongue, but I fail frequently when getting the back (1/3) upwards.
What technique do you use? How do you ensure that it’s all up there? Also I don’t get that “click” sound (that John Mew described) when releasing my tongue from the palate.
Practicing a push swallow with a cheesy smile as described in this video ( https://youtu.be/gcI8CvoFxfQ ), might help you get a feel for what it's like to engage your soft palate with the posterior 1/3 of your tongue.

What if my maxilla is down in the front and up in the back? I can place the front of the tongue and the middle easily, but the back needs to be forced up there so when I really force it the tongue hardens and widens so its pushing in between my back molars. A few weeks ago I couldn't even reach the palate there, now I seem to be able... barely.
I have this downward slope thing going on in the maxilla from back to front, so my incisors meet before my back teeth. My furthest back molars don't even meet, they have an approximate 3-4 mm gap between them. My front incisors also overlap 2/3rds, deep bite with an overbite. Mewing seems to be worsening the overbite and there is a slight noticeable decrease in how deep the bite is. I checked and the entire maxilla seems to be moving forward about 1 mm, my canines moved forward, its not the front teeth tipping.. odd.
e_e ohh its starting to make sense why the back second molars have an inter-molar of 46 and right after those the first molars barely had 40 mm 3 months ago.

What do you means?
