Tried steak for the first time today.

Overcooked it and it was so hard to chew, it was like rubber.

It ended up hurting my jaw so much even though I eat hard vegetables etc. Also had a clicking Jaw

Should I cool it medium rare? Or would that be too soft and considered as a ‘soft modern’ diet food.

Most of the chewiness is gonna come from the cut of steak. Lesser quality (cheaper) cuts are in general going to be tougher no matter how you cook it, for example the beef typically used in pot roasts is extremely chewy.

Cook it however you like, I like it basically raw in the middle with the outside flash seared.

You have to build your jaw up to it, slowly. Personally when I ate meat I enjoyed hard steak, the one really really hard to chew, it was a really nice feeling like a gum in your mouth.

And zosogg is right the less fat the harder it will be, meat with less fat is cheaper.
